Usage varies. 1 tsp. Amylase enzyme is typically used by all Grain Brewers to add to a high adjunct mash that may be low in enzymes to aid in converting starches into Sugar. This enzyme can also prevent starch haze in Beer. Use 1 teaspoon per 5 gallon batch. Burton Water Salts 1#

Burton water salts 1/3 oz.< p> a mixture of gypsum potassium chloride and Epsom salts.< p> Burton Water Salts are made up of Gypsum and Papain. Papain is used to prevent chill haze. Calcium Chloride 1#

Lowers mash ph; 1 Grams per gallon adds 72 ppm calcium 127 ppm chloride Calcium Chloride is used by brewers to lower the pH, and add water hardness to the beer. Use up to 1 teaspoon per 5 gallons before the boil.
