Flavour and Aroma Pilgrim has a deeply fruity, spicy, yet unusually pleasant lemon/grapefruit aroma with flavour characteristics including verdant berries and pears. Characteristics Spicy, citrus, pears. Bittering Characteristics As a bittering hop it provides a refreshing, full bodied and rounded bitterness. Flavour Intensity 6 /10 About this Hop With a much hoppier aroma due to its higher levels of Humulene and Challenger-like Selinene, it works well as a bittering or late aroma hop. Breeding Bred at Horticulture Research International (HRI), Wye College in the UK, Pilgrim was a new variety released in 2001. With its plump and oval cone structure, it is highly tolerant to wilt and has a good resistance to both powdery and downy mildews. It has excellent storage stability of the resins.

Characteristics Sweet, floral, minty. Bittering Characteristics Full bodied and well rounded describes Progress' bittering characteristics. Flavour Intensity 6 /10 About this Hop Progress makes an excellent bittering and late aroma hop. Breeding Originally introduced as a replacement for Fuggle, a seedling of WGV crossed with OB79, it was developed at Wye College in the UK in 1951 and released for commercial growing in 1964. Progress is a tall hop with a cone structure similar but more open than that of Fuggle and it has a tolerance to wilt, but a susceptibility to powdery and downy mildews.

Flavour Intensity 6 /10 About this Hop Increasingly well regarded, Sovereign works well as a single hop and is a wonderful hedgerow variety with a medium alpha acid range and wonderfully complex aroma. Breeding Bred from an open pollination made in 1995 at Horticulture Research International (HRI), Wye College in the UK and released in 2006, Sovereign is the grand-daughter of Pioneer and works well with Goldings in British bitters and pale ales.

Flavour Intensity 7 /10 About this Hop Whitbread Goldings Variety has a distinctive and robust flavour and although Goldings features in its name, it is more likely to have Fuggle pedigree based on its Farnasene content. Breeding An open pollinated seedling of Bates Brewer, selected in 1911 on the Beltring, Kent farm of the late Mr E A White, which was later bought by the Whitbread Brewery Company, WGV was recognised for its tolerance to wilt in 1932 and released for UK planting in 1953. It is however, susceptible to both downy and powdery mildews.
